🍍🍗🫑One Pan Hawaiian-Inspired Chicken Ingredients: • 2–3 chicken breasts (or thighs) • 2 bell peppers, sliced • 1 red onion, sliced • 1–2 cups pineapple chunks (fresh or canned, drained) • ½–1 cup teriyaki sauce (I use Primal Kitchen) • Olive oil • Salt, pepper, garlic powder • Cooked rice, for serving Instructions: 1. Preheat oven to 400°F. 2. Add bell peppers, red onion, and pineapple to a large baking dish or sheet pan. 3. Drizzle veggies with olive oil and season with salt, pepper, and garlic powder. Toss to coat. 4. In a bowl, season chicken with salt, pepper, and garlic powder. Pour teriyaki sauce over the chicken and toss until coated. 5. Place chicken on top of the veggies. 6. Bake uncovered for 25–30 minutes, or until chicken is cooked through (165°F). 7. Optional: Broil for 2–3 minutes at the end for a little caramelization. 8. Into a bowl add the following ingredients: 600g Skinless Chicken Thighs (200g/) , 1 Tbsp Minced Garlic, 1-2 Tbsp Minced Lemon Grass, 2 Tbsp Soy Sauce, 1 Tbsp Fish Sauce, 1 Tbsp Oyster Sauce, 1 Tbsp Sweetener (Brown Splenda), 2 Tsp Garlic Powder , Black Pepper and Salt to taste 2. Allow the chicken to marinade for a minimum of 30 minutes and up to 24 hours 3. Add the following into a container to make the cucumber salad: 1 Sliced Cucumber, 1 Tsp Garlic Powder or Minced Garlic, 5ml Sesame Oil, 5ml Soy Sauce, Pinch of Gochugaru or Chili powder, Green Onions, Sesame Seeds, Salt and Pepper to taste and mix well. 4. Cook the chicken thighs in the air fryer at 370F for 14-16mins 5. Divide into 3 equal portions and serve on 125g of white rice, garnish with sesame seeds, cilantro and enjoy!
